Agave convallis used for making Jibali Mezcal is a remarkable species known for its frothiness during fermentation and distillation making it a rare treat for conissours . Due to its foaming only the best maestros and masters can work with this agave in the post harvest process.
This agave thrives in Oaxaca and Mexico's mountainous regions and is typically found in mixed shrublands and tiny cracks and crevices on hillsides. Its impressive foliage consists of a compact array of stiff, succulent leaves in a vibrant lime green hue, adorned with reddish-brown to pale gray spines along the edges. The center of each leaf boasts a distinct yellowish stripe, which will to an intense red tint in dry weather (it will change back to green after it returns to its normal watering). This versatile plant can thrive in warm temperate climates as well as drier tropical regions.
This agave takes 10 to 15 years to reach maturity.
